Pizza Supplies – Caring for aluminum pizza screens
American Metalcraft offers some great tips on how to care for aluminum pizza screens. Before you use an aluminum pizza screen for the first time, it is important to treat the pizza screen. American Metalcraft recommends treating aluminum pizza screens with a release agent or oil, to prevent food from sticking to the pizza screen.
An aluminum pizza screen can also be seasoned by wiping oil on the surface of the pizza screen and allowing the oil to soak for 30 minutes. Next bake the pizza screen at regular cooking times and temperatures. Once the screen has been baked wipe off any excess oil (do not wash). The oil residue, and any additional oil added to the aluminum pizza screen before baking will make the pizza screen stick-resistant.
Ideally, aluminum pizza screens should be washed by hand using a mild detergent (preferably one made specifically for aluminum). After washing the aluminum pizza screen dry the screen completely before storing. To insure proper sanitation it is best to heat an aluminum pizza screen to cooking temperature in the oven after each wash, and then reapply a release agent or oil to prevent sticking.
