Yesterday, I mentioned that some restaurateurs are reducing portion sizes and trying to hide the fact...but what if smaller sizes are exactly what your customers want? A new article on QSRMagazine's website posits just that, saying that mini desserts are on the rise.

The idea is that mini-sized desserts are better for you (fewer calories due to their size), and cost less. A money conscious consumer might actually be more tempted to buy a smaller size because they believe it costs less than the larger portion. It often does--and as the article points out, when the patron feels they've saved a few dollars on dessert, they are more likely to go ahead and spring for an after-dinner coffee or glass of wine.
